Puff puff need no introduction to Nigeria, Nigerians, or anyone in general in West Africa. 

Though it is a simple dish with a few inexpensive ingredients, don’t let its ease deceive you about how wonderful it is.

INGREDIENTS

600g all-purpose flour

10g fast action yeast

150g sugar (use as desired)

½ tsp salt

550-650g Lukewarm Water

1-3tbsp chilli flakes (substitute with cayenne pepper)

Vegetable Oil

HOW TO MAKE PUFF PUFF

Both quick and active yeast will work well for this recipe’s yeast proofing requirements. 

You may omit proofing the yeast if you’re using quick yeast. 

It’s a good idea to prove the yeast if you’re using active yeast.

Mix carefully the dry components and wet ingredients together.

Leave the batter to proof: The batter needs to prove for about an hour in a warm location. 

A little bit more or less, or until the batter has increased in bulk by around two to three times.

Fry: Before frying the puff puff, make sure your oil is heated. 

Insufficient heat will cause the puff puff to absorb the oil.
